Ginger Lemon Iced Tea – so so refreshing! With the sour lemon, strong ginger and paired with a little bit of mint, it’s Summer in a glass. Alongside mojito, this is my go to Summer drink. Although this one’s non-alcoholic, which is just all the better really. We don’t need alcohol to dehydrate this Summer refreshment.

But we can of course, I’d totally do it for brunch or just because – but not everyday? Let’s leave the question mark just there. There’s always something missing in a virgin mojito, but that is not the case for this ginger lemon iced tea.

My boyfriend is all about iced tea (what a lady), but he is leaning toward peachy flavors. So, I’ll have to try that too, but lemon is just so much easier (and in my opinion super delicious!). He has not even gotten the chance to taste this one because I drank it all, woops.

 

The perfect excuse to make a second (ahem, third…) batch!

This is a ridiculously easy recipe. Boil 1 liter of water and pour into a heat resistant mug, add in 4 bags of black tea. I used the cheapest Earl Grey, mostly because I had it and I don’t drink that hot, so to get “rid of it”, I used it. I usually use Twinings or Lipton Earl Grey. Nevertheless, cheap Earl Grey Iced Tea was super delicious too!

Add in the zest of one lemon, grate a knob of ginger and two sprigs of mint. Muddle it a bit to release the juices. If you don’t want such a strong ginger flavor, just don’t grate it and slice it instead. It will taste bitter if you add in the whole zest of the lemon including the white rind. Bitter could be your thing, then go ahead! If not, I’d zest it.

 

Let all this get to lukewarm

(but do not take out the tea bags). I’m telling you, this is taking forever. It’s incredible how long it takes for this to cool down, especially compared to how quickly my cups of supposedly hot tea gets cold! If I turn my eyes for a minute, bang, it’s cold! That’s fairly unfair. However, this ginger lemon iced tea does cool down, and when it does, yummm.

When lukewarm – add in honey and juice of one lemon. Remove the tea bags. Stir and give it a taste. It’s more difficult to adjust the sweet level after it’s cold, because the honey won’t dissolve. Add in just 2 tbsp first, and add more as you please. I like my iced tea sweet, but not all sugary. The tea and other flavorings need to come through too.

 

You can adjust the sweetness when it’s cold too, but then you need to make a simple syrup (1 part water, 1 part sugar, heat on the stove to dissolve the sugar). So it’s pretty salvageable, especially if you’re several people drinking it with a different opinion of perfect ginger lemon iced tea!

Run the iced tea through a sift to remove all zest and ginger pieces. Set in the refrigerator until it’s cold. Serve with lemon slices, mint sprigs and ice cubes.

 

I talk too much

I get so excited when food and drink is on the agenda. Especially tasty drinks like these. I’ll shut up now. Just pour yourself a glass of iced tea, slice up a lemon and add a sprig of mint, get outside on the porch or in the backyard. Find a comfortable chair, relax and listen to the birds singing.

Instructions

* If you add in the whole zest including the white rind, it will taste bitter. If bitter is your thing, go ahead! If not, I'd zest it.

** It's more difficult to adjust the sweet level after it's cold, because the honey won't dissolve. You can add in simple syrup once it's cold, if it's still not sweet enough, or if one person wants it sweeter they can just add simple syrup to their glass!
