JUMP TO RECIPE

I have been really into making Christmas cookies, sweets, cakes and lunches lately, I have completely forgotten to eat real food. Not completely true, but I have not had the time to make good blog posts about them.

I don’t eat alone, and thus I can’t let them wait until I can get ‘the right shot’ of it. Now that all daylight has seized to exist, I have to move the food to the other side of the house, up some stairs and set up lighting. Yes, that is not good when hungry people are waiting to eat!

I have also tried to make more food in order to have leftovers, but you know what? They only eat more! (Should be a good sign that the food is yummy!) But how on earth am I supposed to make a blog post when people eat my models. 🙁

My whining aside, I had to dig up from my archive to find some delicious food for you guys. I will continue to post mostly on the sweet side during December, but I will try to get some savory in there too. A girl’s gotta eat you know!

Rosemary Fries

I found, I found some delicious side dish/lunch for you! Without further ado, I give you

Rosemary Fries with Garlic Cream Cheese Dip

Sometimes we just want comfort food, and what’s more comfort food than french fries? That’s probably the one food I can never tire of, even for those days when I don’t want food. Yess, those days do exist! I usually think about food 24/7, in my dreams, in the shower, on the treadmill – food is my life. But sometimes, I still think about food, but I don’t want to eat. You can’t be healthy and well and don’t want food, so it’s always the flu or tummy issues, however french fries are always welcome. My point is, I could always eat french fries, especially rosemary fries.

To elevate the french fries, I added rosemary to the party! I made rosemary salt to rub the fries in, and added chili flakes too to spice things up a bit. Pre-heat the oven to 225C (435F). Peel your potatoes and chop them as equal as possible, to ensure even baking. Place them in a bowl of cold water and soak them for 30 minutes. This will help get rid of the excess starch and will leave your fries even crispier.

In a mortar and pestle, grind coarse salt and dried rosemary together. Take the potato sticks out of the water, rinse them and dry them with a paper towel. The more dry, the more crisp you get! Place dry potato sticks into a bowl and pour in olive oil and a little bit of that rosemary salt (a pinch, depending on your taste).

Line a baking tray with parchment paper and lay your potato sticks out on it. Be sure to avoid placing sticks too close together, you want them to have free space all around. Bake for about 30 minutes, but turn them around after 20 minutes.

Meanwhile, make the garlic cream cheese dip. Melt the cream cheese in the microwave for around 30 seconds. Whisk in the garlic, milk, pepper, salt and olive oil until a smooth consistency. When it is smooth, add in the other cheese. Microwave for another 30 seconds and whisk until smooth. Set in the refrigerator until the rosemary fries are ready.

The rosemary fries are done and sprinkle them with more rosemary salt and chili flakes! Serve with ketchup and garlic cream cheese dip. Aand can I recommend dipping fries in mayonnaise? So delish!

Enjoy!
