I wanted to share with you 15 Easy Awesome Recipes I can never get enough of, as my first year food blogging is coming to a close. It's not an easy task, as I love pretty much everything. Some things are closer to one's heart anyway.
It's been a long and interesting journey. It's a lot more work than I could ever imagine, but I love (almost) every minute of it. It is rather tedious if some super techy or code stuff isn't working, but the cooking, writing and photography is so much fun. You learn so much along the way, and I just love it.
I think about food and photography pretty much 24/7 so it is a lot of work, but it is also so rewarding. And looking back at this year, this is my 15 easy awesome recipes!

Drinks
1. Ginger Lemon Iced Tea
As my blog name might reveal, I love all things ginger. If I can add ginger, I will do so. And I love lemon, and I love tea. So, it is really a given that this recipe won a place on my 15 easy awesome recipes list. It's just so flavorful and refreshing for a warm Summer day. It's easy to put together and just simple ingredients I always have on hand.

2. Cucumber Pomegranate Vodka Lemonade
This drink came together during the heatwave here in Norway. My mind just melted and I needed a fresh drink to cool my head. I had been thinking of adding cucumber to my drinks for days, and I finally got together and made one. While travelling in the Balkans, I tried pomegranate juice, and it was so delicious. I had a pomegranate, I had lemons. And I wanted vodka. So, this is also Summer in a glass, only with a little spike for the adults.

3. Orange Hot Chocolate
Even though I am writing this post on a hot Summer afternoon, I am still dreaming of hot chocolate season. I love it when the rain or snow pours down and I have the perfect excuse to make a batch of hot chocolate. Orange hot chocolate is a simple way of adding a little more flavor to it, and I don't ever tire of this delicious combination.

Healthy
4. Chocolate Coconut Overnight Oats
This one is so simple to make, you can easily double it and have it ready for lunch the next day and the day after that. I love chocolate, but I try to eat less of it, and this is a loop hole to get my chocolate fix in a healthy way, so naturally it had to go into my top 15 easy awesome recipes!

5. Whole Wheat Bread Rolls
I love bread too. But what I don't really like, is eating white bread. It has it's moments of course (like in a french toast casserole), but for breakfast or lunch, I definitely prefer whole wheat. It's more filling, more texture, more yummy! And who doesn't love the smell of bread right out of the oven? I know, right, none.

6. Middle Eastern Tabbouleh with Quinoa
I loove tabbouleh! It's so fresh, herby, filling and so easy to make. It's more filling with the quinoa, healthy with a ton of vitamins and minerals, and all the vegetables you want to add; tomatoes, cucumber, delicious herbs like mint and parsely. Mmmm, definitely one of my top 15 easy awesome recipes. I think about tabbouleh at least every other day. I might need to make it tomorrow. Yes!

7. Vegan Thai Lemongrass Noodle Soup
Ahh, lemongrass. Every one that knows me knows I'm a sucker for lemongrass. When I was in Thailand and Vietnam I always chose the dish on the menu that contained lemongrass. I think it gives a more authenic Thai flavor, which I absolutely love. This soup is bursting of Thai flavors and is naturally vegan.

Dinner
8. Cheesy Beef and Beans Enchiladas
I'm not one for cheese in large quantities, but a little goes a long way. This enchiladas has a delicious homemade enchilada sauce, and it's ridiculously easy to make. Add spicy guacamole, a fresh salad and you have yourself a deliciously comforting Mexican meal.

9. Sweet and Spicy Asian Beef and Broccoli
Sticky glazing, not much is better than that. If you like spicy food, you will love this! And it's also a great way to eat a whole lot of broccoli. One person eats half a broccoli in this recipe, it's so delicious. Sweet from the honey and spicy from sambal oelek and Sriracha! I mean, it's hot, but it's so darn tasty!

10. Easy Tacos al Pastor
Mexican food is one of my favorite cuisines, next to Thai (and Chinese and Italian and... so difficult to narrow it down). Tacos al Pastor is usually a little extra work, with the way you grill the meat. However, I personally don't think it needs to be difficult. Here's an incredibly easy way of making tacos al pastor made with a lot of fresh pineapple!

Dessert
11. Chocolate Lava Cake
Holy moly, this is a chocolate lover's heaven! Chocolate cake with a ooey gooey center, topped with a fresh red currant and raspberry sauce. I have no words, if you love chocolate you need to try this. And it's not so difficult as you might think, it's actually incredibly easy!

12. Crispy Fluffy Doughnuts
The Norwegian doughnut - smultring - is like a million times better than the American kind. It's crispy on the outside, soft and moist on the inside and celebrating the deliciously clean flavors in the doughnut. It might be a Christmas treat, but I am so going to make a batch now.

13. Tiramisu Cake with White Chocolate Mousse
This is a handful of a cake. It's a lot of steps, but that is also one of the reasons I love it, and it's not really that difficult. Once all the hard work is done, it is so so worth it. It's a super moist cake, with flavors of coffee, white chocolate, cream cheese, dark chocolate. It's got it all. This is the cake to make to impress anyone!

14. Chocolate Coffee Cupcakes with Irish Baileys Frosting
I have overused the word 'delicious' by now, but what do I do when it's all so incredibly delicious? They are luscious, heavenly, divine. It's a coffee lover's dream but also for us that doesn't like the bitterness of coffee. It's sweet with the chocolate, with the right amount of bitter coffee. And there's Baileys.

15. Vanilla Custard and Coconut Sweet Buns
I am finishing this top 15 easy awesome recipes list with one of my secret weapons. These sweet buns are unlike anything you've ever tried. Fluffy bun, sweet vanilla custard and delicious (again with that word!) coconut. I wish I could eat one - three - every day.

SO many good recipes in here - where to begin?! It's getting a little chillier here so I think a warm cup of that hot chocolate along with the oats in the morning wouldl be amazing!

Oh my goodness! There's just so much love on this page. The two recipes I want to make ASAP are the yummy Chocolate Coconut Overnight Oats, and the fabulous Cheesy Beef and Beans Enchiladas. My fork and spoon are ready! Yum. Yum.
